This is a beloved recipe shared with me by a native New Orleanian. As you probably have gathered, I love making comfort food style recipes that use lots of fresh produce and real ingredients. Creole gumbo: A true New Orleans Creole gumbo starts with a lighter roux—meaning a shorter-cooked roux with a less intensely toasty flavor—ham or chaurice (spicy fresh-pork sausage), okra, and tomatoes, all simmered in a flavorful stock.   1. Chop the chorizo. Place in a hot pan and cook to release the oils.
  2. Chop the peppers, onion, garlic, chilli, celery and okra.
  3. Remove the sausage from the pan with a slotted spoon saving the oil. Add the flour to the oil to make a roux. Cook to darken the roux..
  4. Add the chopped vegetables, cooked chorizo, chicken and creole spices (see ingredients). Cook for 10mins on a medium heat.
  5. Add the stock to deglaze the pan then add the chopped tomatoes and thyme. Cook on medium heat until the sauce has reduced.
  6. Finally add the prawns and cook for a couple minutes.
  7. Serve topped with some lemon thyme and serve with crusty bread.
