I like gumbo, all kinds of gumbo, but I needed to make gumbo with much less heat and chose this recipe to highlight the sweetness of shrimp and crab. If you like more heat, adjust with hot pepper sauce at the table. And I agree about searing the scallops and just adding them in - but then I just love caramelized flavor too 🙂 Lovely gumbo! Since the gumbo was a little different, I figured it needed a different side, and since gumbo is oh so southern, grits immediately came to mind. Oh how I love grits you guys.
