Turkey and sausage gumbo. This gumbo is a great use for leftover roasted turkey, though cooked chicken will also work. We skip the long-stirred roux here in favor of filé powder, a thickener made from the sassafras plant; look for it on the spice aisle. For the best results, stir in the filé powder off the heat.

- Melt 1 cup of butter in 5 quart saucepan..

In the large stock pot add the strained turkey stock, turn the heat to high, and then add the chopped onions, celery, bell pepper, and garlic. Bring to a boil, reduce heat and simmer. Add the turkey and sliced sausage to the gumbo. Stir in green onions and parsley. Serve over rice, with hot french bread!
